Buckwheat Chocolate Chip Cookies

These cookies are perfect for those not-so-sweet midnight cravings. A perfect substitute for its gluten counterpart, these cookies are ideal for gluttony!

Ingredients:

  • 1/2 cup buckwheat flour
  • 1/3 cup oat flour
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • a pinch of salt
  • 1/4 cup coconut oil
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 cup chocolate chips (ensure that the chocolate doesn’t contain milk solids. read the ingredients label to confirm)
  • 1/4 cup chopped walnuts or any other nuts (optional)

Method:

  • Pre-heat oven at 180° C.
  • Cream together the coconut oil and sugar until smooth and fluffy. Add in the egg and vanilla. Mix in the dry ingredients.
  • Stir in the chocolate chips and nuts.
  • Mix well and chill the dough for 30-60 minutes.
  • Form small balls or any other shape you wish, keep on a greased and lined tray and bake for 12-14 minutes.
