Nigella Lawson’s Apricot & Oat Cake

Adapted from the one and only Nigella Lawson’s recipe, this cake is nearly flawless. It has a nice crumbly texture, however, is a little heavy to eat. You will feel reasonably full after a slice. The original recipe doesn’t have a lemon glaze on top, but we added it as we felt the cake lacked a little in sweetness. However, if you prefer your cakes to be on the less sweeter side of things, then skip the lemon glaze altogether.

Also, we used corn meal instead of the polenta originally mentioned in the recipe in the same quantity. Here are some of the photographs of the cake for you to drool over!
